Mozzarella is one of Italians’ favourite things. And because we quite fancy Italy and delicious food, there was no way for us to skip it. The truth is that it is tasty even when it is not cooked and we would snack on it directly from the packaging. After all, we have decided to present you several very easy and quick dishes where it takes the leading role. Boun appetito!
Toast with spinach and mozzarella
6 slices of toasted whole-wheat bread
6 tbsp. shredded mozzarella cheese
Tabasco sauce (optional)
For the filling:
3 cups finely chopped spinach
1 tbsp. butter
½ cup finely chopped onions
2 tsp. finely chopped fresh chilli peppers
pinch of baking soda
1 tbsp. corn flour dissolved in ¾ cup low-fat milk
In order to prepare the filling for the toast, heat the butter in a non-stick pan. Add the onions and the chillies and sauté for 1-2 minutes. Add the spinach to the pan and sprinkle with the baking soda. Sauté for 2-3 more minutes. After that add the flour and the milk mixture and season with salt. Stir well. Cook on medium heat for 2-3 more minutes. You are looking for thick consistency. Stir constantly. Serve on the toasted bread. And get ready for pictures!
Tomato, mozzarella and prosciutto salad
3 large tomatoes
2 balls of mozzarella cheese
200 gr. Prosciutto crudo
extra virgin olive oil
salt and black pepper
Cut the tomatoes and mozzarella balls in large rounds. Arrange the prosciutto in a plate. Then start placing a slice of tomato over it and on top a slice of mozzarella. Chop the basil finely and sprinkle on top, or simply place it to decorate the plate. Season with a little bit of extra virgin olive oil, some salt and black pepper. Serve with toasted bread or make bite-size pieces just like we are going to do. A new rendition of the famous Caprese!
Omelette with mozzarella
1 cup milk
½ tsp. of salt
½ cup shredded mozzarella cheese
1-2 tbsp. finely chopped onions
Pre-heat the oven at 180oC. Oil a roasting pan and set it aside. Whisk the eggs and milk. Season with salt. Add the prosciutto, the mozzarella and the onions. Pour the mixture into the prepared pan. Bake the omelette in the oven for about 45 minutes. Quite healthy and absolutely delicious!
